I buy big cuts of beef and long pork loins because it's cheaper then buying pre-cut steaks or chops. I was using an 8" chef's knife and it just wasn't cutting it (pun intended). It was to big for intricate trimming work and too wide for slicing. I don't do it very often so I didn't want to break the bank on a super expensive knife. This knife is great. I use it for trimming fat and cutting chops. The price was right and it gets the job done like a pro. It's flexible enough that you can also get away with using it for filleting.

We use these to process chickens. Wonderful knives, and the plastic handle holds up in all the water. Easy to sharpen. We recommend these to everyone we teach about chicken processing.

Nice very flexible blade if you like a stiffer blade I would not pick this one. It works wonders with filleting meat. Will by again

Blade and handle feel is nice along with the grip. Rusted as I cutting chicken however.
