The RV Designer S801 Dual GFCI Outlet with Cover Plate is designed for use in RVs and motorhomes. However, whether or not it is suitable for use in an RV that has no box installed depends on the specific installation requirements and electrical codes in your area.

Q: What is the length this sticks out from wall once installed?

The back of the face plate sits flush to the wall, the GFCI probably sticks out 1/8" or so. In total it maybe sticks out 3/8", probably less. There is no box or anything on the back to make it stick out more than what is seen in the picture. I've had it installed now for a while and it was an exact replacement for the one I had so it was an easy job to replace.
