This small goat cheese has a bloomy, moldy rind covered with vegetable ash. It doesn't look like the most appetizing cheese in the world, but, much like most moldy cheeses, the inside is soft, creamy and delicious. Valencay Cendre comes from the Loire Valley region, it is shaped like a shaved pyramid, and aged for about 3 weeks - making it a young, fresh cheese. The flavor is mild and nutty. Bring to room temperature before serving, and it will become super soft and gooey. Serve with honey and sugared fruits. You probably want to avoid the rind. Serve with a Sancerre or Chablis.
