I would say no. I'm a starch chemist and ordered this product to compare to another commercially available sweet potato starch for a project. It appears to be in granular form which would be 5 to 40 microns in size. Somewhat similar in size to corn starch granules.

Q: is this product gluten free?

Nothing on the package with that info, the writing is partly in Japanese. I would not know what to assume.If the recipe is to be trusted, it claims sweet potato starch is gluten free.
